◆どんな味？
味のベースは、「白山麓のしょうゆ糀」です。このしょうゆ糀から私たちが手づくりしており、米こうじと、天然醸造しょうゆだけでつくられる伝統発酵食で希少価値は◎。
添加物も一切入らない長期熟成・天然醸造のしょうゆと、麹菌による自然発酵でまろやかな味になります。

和のしょうゆ糀に、西洋の「バルサミコ酢」がプラスされます。和と洋が融合することで唯一無二の味になります。

そこににんにくと大葉です。どちらももちろん国産です。にんにくは、ソース＆ドレッシング専用のやり方で、大変手間のかかる方法で擦りおろしています。
大葉はこのドレッシングの決め手となるくらいたくさん入っており、濃い味ながらも爽やかさも感じられるように工夫しています。

◆甘味の秘密は？
原材料に「砂糖」と書けば、どんな砂糖なのか？分かりません。私たちはあえて「てんさい糖」と書いています。
完全に精製された白砂糖ではなく、精製度が低く、オリゴ糖や食物繊維が多いてんさい糖を使用しています。
美味しくて、それが胃腸にも優しいヘルシーなものであれば尚嬉しいということで、あえて原価も高い「てんさい糖」を使っています。
